I've got a book called "Cooking with Scraps" by Lindsay - Jean Hard in last March. Her carrot green pesto recipe took my interest to use carrot greens for the first time. It worked well! There are some vegetable parts that we mostly do not know how to cook and use. Carrot greens were one of them for me until I read Lindsay's pesto recipe.
For IWNG online lunch, I made carrot green pesto and put on a bread. Secondly, I cooked couscous pasta for salad.
